In the kitchen again :)

I'm slowly trying to get back to my cooking self and not become totally dependent on Lean Cuisines. So last night I was back in the kitchen for another casserole-y dish. This time Corn Pudding.

One of my brother-in-law's birthday was yesterday and we had a "dinner party." I will use the word dinner loosely because even on a Tuesday night they PAR-TAYED!

Of course me being of the lamer variety...I went home probably as the party was cranking up (I was sooo sleepy).

Anywho, for those of you that actually try some of the food I post on my blog, thank you! And for my cousin C.N. I am sure you and the hubby will enjoy this.

I only make this for crowds and haven't tried a smaller version but it's so good you won't want a smaller version! Adapted from Cajun Corn Pudding on www.foodnetwork.com.
I use frozen corn...and frozen onions and bell peppers (time savers).

I used an aluminum pan so I didn't have to worry about clean-up/getting my pan back. Placed the pan on a cookie sheet

This recipe has been a hit every time I've made it and I've made it several times in the past few months. When I went to fix me a little more it was all gone. Go figure. I don't even know if my BIL actually got some and this was one of his presents from me!

I didn't list the ingredients because I vary slightly from the recipe and I don't use precise measurements. this is truly a dish to make your own.

I add a handful of Monterrey cheese and I like the color that red bell pepper adds (didn't have any this time). It is truly a delicious dish that is awesome with hot wings. If you try this recipe, please come back and let me know what you think!!

Let me give you a little bit of my back story on this Marvel Cinematic Universe. I am a Marvel fan. I don't read the comics, but the movies?! I'm here for them. Pura Vida!

Hey y'all!

I keep making promises to do better about posting and then I break those promises. So I won't make any such promise this time!

I wanted to give you all a little run down on a trip I recently took (and LOVED). Two of my sisters and my two best friends and I decided to make a run for the equator. To Costa Rica! We started planning pretty early and got tickets and such purchased. We stayed in Jaco (pronounced Haa-CO). I'm still not sure I'm saying that correctly. You should have seen the looks on the immigration officer's face when I pronounced it as it is spelled. I'm pretty sure he called me an ignorant American.

Anywho, we flew from Charleston because they had the better fares and schedules at the time that we booked. Charleston to Miami to Jan Santamaria Airport. Soup(er) Sunday!

This past Sunday I hosted a Crafty with Canon party. I won the party through House Party (I love this site!).

Initially I was planning to do a few different finger foods. Well, the temperature dropped and I wanted soup. And chili. So I made both! And my sister also made a soup that was super delicious. I used my usual go to chili recipe, except I doubled up the seasonings because I didn't have a chili seasoning pack. I think it actually tasted better! I made it in my electric pressure cooker! It was so much faster and it tasted better than it usually does. I'm in love with my pressure cooker and would like another one. Anyone have one they want to give me?

Anyway, we had fun exploring the Canon Pixma printer and printing out photos and making cute little frames! But the food was really the star of the show! I'm going to link to all of the recipes because aside from small adjustments, none of them were my own!
