Hey y'all! I feel like I've been caught in that tornado from the Wizard of Oz and transported to some alternate universe where my life is not my own. To say my days have been crazy is an understatement. But I'm really trying to KEEP CALM AND CARRY ON!





See, it took me a while to get to the "CARRY ON!" LOL

I still have YET to move out of my cozy bachelorette pad...although it's mostly packed up and my mattresses now reside on the bedroom floor. All of that will change this weekend though (hopefully). I fully plan to empty the place out...although my storage unit is already full...so does anybody have a garage I could borrow for a few weeks? I'll make you cookies! I'm. Dead. Serious.

But! On a much brighter side, the closing date is a mere 3 weeks minus a day away...and I FOUND A HOUSE! Not news to some of you because I have found a plenty houses...but this one is under contract! I don't know if I have ever been so excited and nervous and scared (at the same damn time) in my entire life. It has everything that was on my wishlist...even the negotiable items. I know, I rock! LOL I can't take much credit though. I have an amazing realtor and I don't know what either of us will do once this process is over. I'm sure his days will never be the same! 

Waiting to see if my offer was going to be accepted was torture. Then they countered, then I countered...then they accepted! I wanted to party to celebrate, but once I got out in the streets I was ready to go back home. I know lame. But this is what I wore...cute...and I got this dress on clearance at JC Penny for like 4 bucks. Yep. Awesome!


Since the partying thing didn't work out...I went to what comforts me best. Cooking. I thought after the offer was accepted I would have a sense of ease. Nope. More anxious. So I decided I wanted some chili. I could have just gone to Wendy's and got a cup and called it a day, but no. At 9pm on a Sunday night, I decided I wanted to make my own. So off to Wally World I went to gather the needed ingredients.

RoJo's Chillin' Out Chili - I adapted this from a couple of recipes to make it my own just the way I like it. You guys know by now, my digestives refuse to process too much beef, so I always use ground turkey. Feel free to substitute it for lean ground beef or pork or chicken...

Chili

Ingredients

1 pound ground turkey 
4 strips of bacon (I use pork)
1 onion - diced
1 bell pepper - diced
2 stalks of celery - chopped
3 cloves of crushed garlic
2 14.5 ounce cans of fire roasted diced tomatoes (I think that's the right oz...but TWO CANS) lol
1 can dark red kidney beans
1 can black beans
1 can beef broth
1/2 teaspoon of each - cumin, basil, oregano, parsley, paprika, thyme, red pepper flakes (add salt if you like)
2 teaspoons chili powder
1 packet of hot chili season (I think McCormick makes it)
fresh ground black pepper to your liking

Yes I use all the seasonings AND the seasoning packet because that is the flavor I like. Feel free to change it up as you like. Use just the packet or just the seasonings...up to you.

Chop bacon and fry in a large kettle until it's crispy. Remove the bacon from the pan.
Add to the pan ground turkey, onion, garlic and all spices (including spice pack). Cook until the meat is browned and the onions are translucent.
Add celery and bell pepper. Cook until the veggies are tender.
Add tomatoes, cooked bacon and beef broth.
Bring to a boil, reduce heat, cover and simmer for 1 hour - stirring occasionally.
DO NOT DRAIN THE BEANS! You need that juice!
Add beans and cook for at least one hour longer - still stirring! The longer it cooks, the better.

Topping suggestions: Green onions, red onions, sour cream, cheddar cheese, bacon, jalapenos, sauteed mushrooms. Try some or all! Try it served with a baked potato too!

This is a really yummy and comforting chili. It's forgiving so you can adjust the ingredients to your liking. I've also made it with roasted corn and it was great that way as well.

Black Panther: Movie Review

Please tell me y'all have seen the movie? If you haven't, don't read this post!

Let me give you a little bit of my back story on this Marvel Cinematic Universe. I am a Marvel fan. I don't read the comics, but the movies?! I'm here for them. Some of them are blah, but I watch them anyway. Why? Because usually they overlap and share stories. So, in preparation for the opening of Black Panther, I watched ALL of the Marvel movies in order of the stories, not the release date. I followed CNET's guide and it was pretty accurate. I did not watch the TV shows because I would still be watching. You don't have to. The movies will fill you in pretty well.

Now, for what I thought.

1. This movie was beautiful! The colors, the wardrobes, the technology, the natural hair, the beautiful black people that starred in this film, it was amazing!

2. The women. OMG. The WOMEN! The strong women in the movie inspired me. Okoye makes me want to shave my hair back off. Nakia makes …

Soup(er) Sunday!

This past Sunday I hosted a Crafty with Canon party. I won the party through House Party (I love this site!).

Initially I was planning to do a few different finger foods. Well, the temperature dropped and I wanted soup. And chili. So I made both! And my sister also made a soup that was super delicious. I used my usual go to chili recipe, except I doubled up the seasonings because I didn't have a chili seasoning pack. I think it actually tasted better! I made it in my electric pressure cooker! It was so much faster and it tasted better than it usually does. I'm in love with my pressure cooker and would like another one. Anyone have one they want to give me?

Anyway, we had fun exploring the Canon Pixma printer and printing out photos and making cute little frames! But the food was really the star of the show! I'm going to link to all of the recipes because aside from small adjustments, none of them were my own!

2018: Happy New Year!

Hey y'all!

I pray that the New Year has found you all happy and healthy!

Do you all do the traditional "New Year" things like making sure your house is clean, all laundry is done and eat greens and black eyed peas?

For most of us southerners, this is tradition. We do it faithfully. Guess what? This. Year. I. Did. Not.

I've never frantically ran around trying to get things done anyway, but I would try to at least have the house in order when the New Year hits. This year though, we got back in town on the 30th. We were tired. On New Year's Eve we went to breakfast with friends and did a little grocery shopping. Then we rested. And all of my sisters decided my house was the place to bring in the New Year. The kitchen and dining areas were clean!

I do, however, eat my greens (collards for me) and black eyed peas. I fell into the electric pressure cooker craze in 2017. I actually bought the thing in 2015 and had never used it! I didn't get one of the top brands either.…
