Quick and Simple

These days the last thing I'm thinking about is cooking. Anything. I just don't want to do it. I don't want to stand in front of the stove, I don't want to prep food and I definitely don't want to wash dishes. But I gotta eat. Being that I'm going to have to take some unpaid leave while I'm out, I had to make myself stop eating out so much. I should own my own Zaxby's by now! So now I am constantly thinking of ways to prepare quick, one dish meals. Chili is one of my favorite go-to meals and I already have some of that stashed in the freezer.

Last week, I wanted some chicken parmesan. I thought up this quick little dish and it was good! And it was a simple casserole that didn't take much time to prepare.


I didn't measure...just winged it so these are guesstimates

Ingredients
2 pounds of chicken breasts - cubed
1 tablespoon Italian Seasoning
1 tablespoon Olive Oil
1 clove minced garlic
Salt and Pepper to your liking
Half a jar of marinara (or your favorite tomato based pasta sauce)
Grated Parmesan cheese
Mozzerella cheese
Seasoned Croutons (garlic ones are yummy) - slightly crushed (I did this in a ziploc bag)

Your favorite noodles, cooked according to package directions. I used whole wheat spaghetti.

Preheat oven to 350
Combine the chicken, seasonings, garlic, and olive oil in a baking dish and stir to combine


Cover with marinara and bake at 350 for 30 minutes.


After 30 minutes, remove from oven and sprinkle with grated Parmesan and Mozzerella. Then top with slightly crushed croutons. Return to the oven and bake for 30 more minutes.

You don't want breadcrumbs so don't bang them up too much



Spoon over your favorite noodles and VOILA! I wanted some broccoli to go with this but didn't have any. Nor did I take a plated picture (forgive me!).

It was simple and tasty. Add more sauce if you're like me and plated too many noodles :)

Let me give you a little bit of my back story on this Marvel Cinematic Universe. I am a Marvel fan. I don't read the comics, but the movies?! I'm here for them. Some of them are blah, but I watch them anyway. Why? Because usually they overlap and share stories. So, in preparation for the opening of Black Panther, I watched ALL of the Marvel movies in order of the stories, not the release date. I followed CNET's guide and it was pretty accurate. I did not watch the TV shows because I would still be watching. You don't have to. The movies will fill you in pretty well.

1. This movie was beautiful! The colors, the wardrobes, the technology, the natural hair, the beautiful black people that starred in this film, it was amazing!

Pura Vida!

Hey y'all!

I keep making promises to do better about posting and then I break those promises. So I won't make any such promise this time!

I wanted to give you all a little run down on a trip I recently took (and LOVED). Two of my sisters and my two best friends and I decided to make a run for the equator. To Costa Rica! We started planning pretty early and got tickets and such purchased. We stayed in Jaco (pronounced Haa-CO). I'm still not sure I'm saying that correctly. You should have seen the looks on the immigration officer's face when I pronounced it as it is spelled. I'm pretty sure he called me an ignorant American.

Anywho, we flew from Charleston because they had the better fares and schedules at the time that we booked. Charleston to Miami to Jan Santamaria Airport. Soup(er) Sunday!

This past Sunday I hosted a Crafty with Canon party. I won the party through House Party (I love this site!).

Initially I was planning to do a few different finger foods. Well, the temperature dropped and I wanted soup. And chili. So I made both! And my sister also made a soup that was super delicious. I used my usual go to chili recipe, except I doubled up the seasonings because I didn't have a chili seasoning pack. I think it actually tasted better! I made it in my electric pressure cooker! It was so much faster and it tasted better than it usually does. I'm in love with my pressure cooker and would like another one. Anyone have one they want to give me?

Anyway, we had fun exploring the Canon Pixma printer and printing out photos and making cute little frames! But the food was really the star of the show! I'm going to link to all of the recipes because aside from small adjustments, none of them were my own!
